Ingredients:
Kingfish
Tomato (1/2 per person)
Red onion (1/4 per person)
Avocado (1)
Coriander (to taste)
Cucumber (About 20cm)
Olive Oil
Lime (2 small or 1 big)
Corn Chips
Method:
1.Cut the Kingfish fillets into little bite sized cubes.
2. Squeeze lime juice onto the fish pieces and stir until covered. Leave for 5 Minutes.
3. Dice onion, tomato, cucumber, avocado and coriander finely into small chunks. Mix with the fish.
4. Drizzle olive oil over the top of the mix. Sprinkle of salt + pepper and mix.
5. Serve with corn chips. Enjoy.
