Coconut Fish Curry

Ingredients


Firm white fleshed fish chunks

Olive oil

Garlic 1tbs

Onion (half)

Ginger 1tsp

Chilli or chilli jam 1tsp

Garam masala 1tsp

Cumin 1tsp

Turmeric 1tsp

Cherry tomato’s 250g halved

Coconut milk 400 ml

Lime


Method


  1. Fry garlic and onion until fragrant in a pan with olive oil over a medium/high heat. Add ginger, chilli and stir.

  2. Turn heat down to medium, add halved cherry tomato’s and stir until softened. Then add garam masala, cumin, turmeric and stir.

  3. Add coconut milk, and leave the heat on a simmer.

  4. Add fish pieces, squeeze of lime and leave to simmer for 30mins stirring occasionally.

  5. Serve with rice, enjoy!
